Raspberry & Chocolate Chip Cookies

Hey guys I thought it would be fun to do like a baking post so here it is!  On the weekend I made these unique raspberry and chocolate cookies with my mum. I can’t take all the credit as it was my mums idea but they taste great trust me. You can buy fondant molds, edible sprinkles, cupcake cases etc go check it out for your self though! Let’s get on with the baking! Xx

For a batch of cookies you’ll need ;
225g softened butter
150g caster sugar
250g self raising flour
1 large eggs
100g chocolate broken into pieces
50g chopped raspberries

This should make around 18 cookies! If you want more you change just double the ingredients.

Processed with VSCO with s2 preset

1.Beat together the butter and sugar until soft.
2.Now beat in the egg and a little of the flour.
3.Now mix in the rest of the flour.
4.Fold in the chopped raspberries and chocolate.
5.Shape cookies with floured hands – you may need to add a little more flour if your raspberries have split and added a lot of moisture to the mix
6.Place on a non stick baking liner.
7.Bake for 10 – 15 minutes or until golden at 180C.
8.Leave to cool and firm up on the baking tray.

And you’re done! They look and taste amazing and are pretty fast and easy to make. Go get baking woo 😂
